Interjet is an airline that has recently started flying out of Canada, starting with Montreal, and now they've added flights from Toronto.
They've just loaded their fares from Toronto to Cancun and Mexico City into their system, and it looks like they're offering some significant discounts on introductory fares.
The flights are non-stop both ways.
July, August, and September dates are $273 CAD (carry-on only) to $341 CAD (with checked luggage) roundtrip including taxes.
November 2017 to March 2018 dates are $404 CAD (carry-on only) to $472 CAD (with checked luggage) roundtrip including taxes.
The most interesting dates for $403 CAD roundtrip are the ones around Christmas and New Year's dates. They are over 40% cheaper than any other non-stop airline option.
Be aware that Interjet is charging $68 CAD roundtrip for checked luggage ($34 each way). The prices in their calendar view are for carry-on only.

How to find and book these flights
UPDATE: Some people are reporting that Interjet is billing them in $USD, even when they are definitely using the $CAD currency version of the Interjet website. I would avoid booking these on the $CAD version of the Interjet website for now. Everyone that has booked these on the Mexico version of the Interjet website, in pesos, has reported the amount they were billed in $CAD is correct (and actually even lower than if they had booked in $CAD). I'm guessing you could also book these on the $USD version of the Interjet website and be billed correctly in $CAD (and may also be a bit lower than what the $CAD website is showing). It seems to just be the $CAD version of the Interjet website that is screwed up.

3. Try dates between now and March 2018.

July, August, September - $162 CAD
October, November, December - $227 CAD

RETURN months:
July, August, September - $111 CAD
October, November, December - $176 CAD

If you are comfortable booking in Spanish, you can go to the Interjet Mexico website and potentially save about $20 to $80 CAD over the prices listed above.

3. Try dates between now and March 2018.
The prices will be in Pesos. They may work out to be around $20 to $80 CAD cheaper when you book the flights in pesos using a Canadian credit card, even after factoring in the typical 2.5% credit card foreign exchange fee.

Just got my tickets this morning. Should have bought last night. It seems that the price difference between Canadian dollars vs Mexican pesos has been fixed. Last night the site was showing about $30 difference between the Canadian site vs the Mexican site. This morning, no difference. Still a good deal.

I booked this morning in mexican pesos showed as $10,559.08 not sure how much in CAD though, anyone have any clue?
Mohamad look at air bnb's, they have good prices if you are on a budget. All inclusive is way to expensive, but depends for how many days you will be going.

My experience with Interjet website and customer service.
The first transaction did no goes through and no email confirmation.
Phoned to customer service(1 844 8744 053) to verify This is the only the phone for Canada and branch located in Mexico. Advising to try again.
The second transaction were completed with Dates mismatched(vise versa).
After receiving a confirmation via an email tried to correct over the phone.
Customer Service(even supervisor) has no power to correct changes over the phone advising use a website. Spent hours!!! on the phone with no success.
The English version in not available to correct online(only Spanish) and charge you extra money not even close that displays in Fare Rules in your profile:
*If the passenger requests the change more than 24 hours prior to the time of the flight originally contracted, the applicable fee will be $580 MN / $58 USD / $79.00 CAD (total price including tax), per segment and per passenger.
Think twice before booking.
Hi,
Booked this flight for two tickets at $992. Email confirmation said $992. THEN I checked my visa statement and it said $1,282. I think there was something wrong with their site, saying it was CAD but really it was USD. So I called customer service and they said they're going to fix it for me.
Hi Monica, yes there is definitely something wrong with the Canadian currency version of the Interjet website.

finally received my wire transfer for the difference in the US vs Cad price that they charged. My bank took a $15 fee but I guess that is better than nothing
Jon - Thanks for the update. I too am waiting for them to wire the difference into my bank.
Just checked my bank and I did receive my refund for the difference in the USD/ CAD exchange rate, however a $10 bank fee was deducted.
