A great price on an open jaw flight from Toronto to Paris, and then Rome to Toronto, for just $565 CAD roundtrip including taxes, and non-stop both ways.
The flights involve using a combination of Air France and Alitalia.
How to find and book these flights
1. Go to FlightHub.com and click on 'Multiple City'
2. For the first leg of the journey, enter:
From: Toronto (YYZ)
To: Paris (CDG)
3. For the second leg of the journey, enter:
From: Rome (FCO)
To: Toronto (YYZ)
4. Now you need to enter a departure date for each leg of the journey.
The following date combinations have been found to work so far:

Oct 13 to 22 - $615
Nov 3 to 12 - $588
Nov 11 to 19 - $565
Nov 24 to Dec 3 - $588
Dec 7 to 17 - $588
Dec 30 to Jan 10 - $565 -- New Year's Eve!

Feb 9 to 18 - $588 -- Valentine's
Mar 1 to 10 - $565
Apr 5 to 14 - $588
May 4 to 19 $607 - 1 stop on the way back
(quite a few other date combinations throughout 2015 and 2016 in the low to mid $600s, up to about the end of June in 2016)
So, for example, if you used May 4 to 19, the search box on FlightHub would end up looking like this:
Important: Click on 'Remove segment' before hitting the Search Flights button. FlightHub will give you an error if you don't.

NOTE: These can also be booked through Expedia.ca for $11 more. You basically just need to do a very similar type of search, by first clicking on 'Multiple Destinations' when you get to Expedia.
How to get from Paris to Rome?
Flying from Paris to Rome can cost as little as $29 with RyanAir. For example, if you fly from BVA airport in Paris to CIA airport in Rome. Note that these are both secondary airports.
Using easyJet or Vueling, it usually costs somewhere between $50 and $80. ORY airport in Paris to FCO airport in Rome is a common route to find cheaper flights.
Update 1 - Aug 13 @ 1:08 PM EST - Toronto to *just* Rome for $567 CAD roundtrip including taxes
If you're not interested in Paris, there are now some regular roundtrip flights to Rome for $567 CAD roundtrip flights.
Try searching for similar dates as shown above for the Paris/Rome flight, but enter them at RedTag (click on the 'Flights' tab once you get there). (Note: There are also many more date combinations available)

The flights on the way to Rome are with Air France and have 1 stop. The flights on the way back from Rome are with Alitalia and are non-stop.
