Most of the time, trying to find a great deal through Aeroplan is a frustrating experience. Even when you *do* manage to find availability, *and* it's not a flight with an incredibly inefficient route, the high 'taxes and fees' included at the end usually mean you would have been better off just purchasing the flight without using points.
However, at the moment there are flights from Toronto to Hong Kong, flying with Air Canada (not Rouge), with 1 stop in Vancouver each way, for around 56,300 miles roundtrip and just $77 in taxes and fees.
When looking at flights on Aeroplan, and comparing it to just outright purchasing the flight without using points, I tend to value the Aeroplan miles at 0.008 cents per mile. That's less than 1 cent per mile. This is the typical value of the Aeroplan points if you were to redeem them for gift cards, which is the closest you can get to redeeming them for cash.
So for our roundtrip flight to Hong Kong, we are essentially 'paying'...
56,300 miles x $0.008/mile
...which is worth $450
+ $77 in taxes and fees
for a total of $527 roundtrip including taxes.
The number of miles required will vary with the dates used. I've mainly been seeing these flights to Hong Kong in the range of 56,000 to 65,000 miles.

How to find and book these flights
1. Try starting with a Google Flights search like this one:
Google Flights search: Toronto to Hong Kong
Open up the calendar view, and look for the cheapest dates. Currently the cheapest flights with Air Canada are $1012 CAD roundtrip.
2. Go to the Aeroplan website
3. Search for a flight from Toronto to Hong Kong. Use the same dates you found on Google Flights.

Toronto to London, England - 27,200 miles + $585 in taxes/fees. Equivalent of paying $802 roundtrip. This is actually more than paying without using points, as the same flights currently cost $726 roundtrip.
Toronto to Paris, France - 22,600 miles + $586 in taxes/fees. Equivalent of paying $766 roundtrip. This is actually more than paying without using points, as the same flights currently cost $737 roundtrip.
Toronto to Rome, Italy - 33,000 miles + $571 in taxes/fees. Equivalent of paying $835 roundtrip. This is slightly less than than paying without using points, as the same flights currently cost $871 roundtrip.
