Aeromexico has dropped the price of their flights from Toronto to various places in Mexico down to between $277 and $349 CAD roundtrip including taxes.
The flights have 1 stop in Mexico City each way.
Most of these are destinations that either don't have nonstop flights from Toronto, or if they do, they're very expensive ($700-$1000 roundtrip).

Is it possible to extend the layover in Mexico City?
Aeromexico has never really been one for allowing extended layovers without increasing the price. It seems to add about $179 CAD to the price.

If you keep the stay to 1 night in MEX the price doesn't increase from $317, but that's not exactly an extended stay.
You could also try a Multi-City like this, with the flight not included between MEX and the second city...
