June multi-city flights from Toronto to Europe - $338 to $388 roundtrip after taxes

There are some interesting multi-city flights to Europe available out of Toronto for June travel at the moment.
The key are a couple of ridiculously cheap one way flights from Portugal to Toronto on Sunwing that are listed at only $35 after taxes. It's their first run of the season so they're apparently a bit desperate to fill up the plane.
Those flights can be found on http://www.sunwing.ca and they are:
June 19: Porto to Toronto
June 21: Lisbon to Toronto
They each show up as $35 after taxes on Sunwing's site at the moment. They initially show as $75 after taxes and then drop to $35 on the confirmation page.

So then it becomes a matter of finding a cheap one way flight *to* Europe. Air Transat is usually a good bet, and there seems be some decent options on airtransat.ca at the moment, such as:
Toronto to Amsterdam - June 11 or 13
$353 after taxes
Toronto to Frankfurt - June 11, 13, 14
$353 after taxes
Toronto to Glasgow - June 11 or 12
$303 after taxes
Toronto to London - June 11, 12, 13, 14
$353 after taxes
Toronto to Manchester - June 11, 12, 13, 14
$303 after taxes
Toronto to Paris - June 12
$353 after taxes
So if you're up for a trip to Europe that starts in one of these places and returns home from Portugal, you can get there and back for as little as $338 after taxes for both legs of the journey.
Of course that still leaves you with needing to get between the two countries, which is part of the fun, and luckily with a little planning it can be pretty reasonable to fly or train it across Europe these days.

July flights to Portugal are now cheap - $396 roundtrip after tax

They're not quite as cheap as the ridiculous June flights, but it looks like July prices to Lisbon, Portugal just dropped. Will they drop to sub-$300 levels like they did in June ? Impossible to say, but sub-$400 to Portugal in peak summer season is still pretty amazing.

Yes, that June 20 to 28 flight from Toronto to Porto, Porutgal has dropped another $50. Because a flight from Toronto to Portugal for $330 roundtrip after all taxes apparently wasn't crazy enough.
